Gluten Free Cream Puffs
Every Monday night is family night in our house and since our kids are getting older we decided it was time to assign them different parts of the night and take the pressure off the parents. Harper was assigned the treat for the night and this is what she decided to make, Cream Puffs!
I am sharing another recipe today from my wonderful gluten-free mother-in-law for:
Gluten Free Cream Puffs
1 cup water
1/2 cup unsalted butter
1 Tbsp sugar
1/4 tsp salt
1 cup + 2 Tbsp powdered sugar
1 tsp corn syrup
Powdered sugar
In a heavy bottomed saucepan, combine the water, butter, sugar and salt. Bring to a rolling boil. Remove from heat and add the flour (all at once) to the pan and quickly stir vigorously until mixed together well. Return pan to the heat and cook, stirring constantly, over medium low heat until the dough pulls away from the sides.
Place the dough into the bowl of an electric mixer and mix with the paddle on low speed until cooled slightly then, on medium low heat until the dough pulls away from the sides.
Then, on medium speed, add eggs one at a time- mixing in each egg completely before adding another.
Immediately transfer the dough to a pastry bag fitted with a large round tip. On a baking sheet lined with parchment paper, pipe mounds in a circular motion until the size of large meatballs.
Bake in a preheated 425 oven on high rack 12 minutes; reduce oven temp to 350 and bake 20-30 minutes longer until dried out. Turn the oven off and remove from oven. With the tip of a small sharp knife, cut a small slit in each side of the puffs, near the bottom. Return the sheet to the oven propping the door open and leave in oven about 1 hour.
Meanwhile whip the cream with the 1 Tbsp powdered sugar and corn syrup until stiff. Keep refrigerated until ready to serve.
To serve, slice each cream puff almost in half, placing on plate. (If the puffs fall during cooking use two to make a cream puff sandwich). Place whipping cream in a piping bag fitted with a star or round tip. Pipe cram between the two halves, generously; then dust with powdered sugar. Serve immediately.
